Ingredients:

1 1/2 sticks (185 grams) butter, softened

Preheat the oven to 375F (180C) degrees line a cookie sheet with baking paper. Once the dough is firm, slice about 1/4 inch thick.Bake for about 10 minutes or until golden brown (for a crunchy cookie), or 7 minutes for a softer cookie.

Ingredients

1 tablespoon vegetable oil

2 tsp. chicken bouillon granules
3 1/2 c. hot water
1 tomato, sliced

Brown sausage in roaster or very large skillet and remove. Season chicken with salt, pepper, paprika and coat with flour. Brown chicken in sausage drippings. Remove chicken and discard all but 1 tablespoon fat. Cook onion, garlic and pepper until tender in drippings. Stir in uncooked rice, bouillon granules, turmeric and water; boil. Stir in sausage and carrots and arrange chicken on top.
Reduce heat, cover and simmer 20 minutes. Rinse peas and sprinkle on top. Cover and cook 15-20 minutes until rice is tender. Top with tomato slices and heat through.

Tarte Tatain es una variante de la tarta de manzana

Tarte Tatin

Ingredients

serves 6
350 g puff pastry
flour, for dusting
100 g butter
150 g caster sugar
1 tbsp golden syrup
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
4 tbsp cider (or apple juice)
5 Cox apples, quartered, cored and thinly sliced
juice of 1 lemon

Method

1. You'll need a tin that's about 25cm in diameter and at least 3cm deep. Roll out the pastry on a lightly floured surface to a circle slightly larger than the tin. Lift onto a baking sheet and chill for 30 minutes.

2. Preheat oven to 200°C/400°F/Gas 6. In a small, non-stick pan, heat the butter sugar, syrup, cinnamon, nutmeg, and cider (or apple juice). When melted, remove from the heat and set aside to cool a little.

3. Place the apples in a bowl and sprinkle over the lemon juice. Drizzle some of the melted butter mixture into the base of your tin. Then, starting in the middle and working outwards in a circular pattern, arrange the apple slices, slightly overlapping, to cover the base of the tin. Drizzle with remaining butter and sugar mixture.

4. Place the chilled pastry circle over the top of the apples, pushing down the edges. Prick the top all over with a fork and bake for 35 to 40 minutes, until pastry is golden.

5. Immediately remove from the oven and place a heat-proof serving plate over the top of the tin. Now invert the tin and plate, so the Tarte falls out of the tin leaving you with the apples on top of the torte. Take great care as you do this, as the syrup that has formed in the tin will be extremely hot Serve warm or cold with whipped cream or a little crème fraiche.

Salad

10 medium potatoes (new potatoes are best)
1 pound of cheese (white "Fresco" mexican cheese works ok, but you could use Feta cheese for a "stronger" flavor)
2 small hot peppers (yellow aji mirasol works best but you could use de yellow mexican chile too)
1 cup evaporated milk
1/2 cup vegetable oil
1 garlic clove
8 saltine crackers
salt and pepper
lettuce
3 hard cooked eggs
black olives

Cook and peel potatoes and allow to cool.
In a blender, blend the cheese, peppers, milk, oil, garlic, crackers, salt and pepper. The sauce should be fairly thick; add crackers if not thick enough, add milk if too thick.
Lay a bed of lettuce in a serving dish and place the potatoes on top. Cover with the sauce. Cut the hard boiled eggs in half and place on top of the potatoes. Add black olives if desired.
This dish can be served slightly cold.

Ingredients

  • 4 eggs
  • 1/8 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1 cup white sugar
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 pound red candied cherries
  • 1 pound green candied cherries
  • 1 pound Brazil nuts
  • 1 pound walnut halves
  • 1 pound pecan halves
  • 2 pounds pitted dates

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease 3 - 8x4 inch loaf pans and line them with parchment or waxed paper.
  2. Beat eggs, salt and vanilla together until very light and lemon colored. Stir in sugar, 1 cup flour and baking powder.
  3. Place cherries, nuts, and dates into a large bowl. Dust with the remaining 1/2 cup flour. Then stir in sugar mixture. There is very little batter which makes this a very stiff mixture. Mix with hands.
  4. Press batter into prepared loaf pans. Bake for 1 hour.

Ingredients:

Preparation:
